It ran from 1971 to 2004 in Crichton, Mobile. Locals called it the Crichton Country Club. The building is gone but the recipes stayed in the family.

The Flowers family, four generations of it. LR Flowers opened a grocery in Crichton in the thirties. His son Mack Sr and his wife Margarete opened the Wheelhouse in 1971. Their son Tyler Sr took it over in 1990, and his son Tyler Jr grew up in that kitchen. He is the one putting these recipes on shelves.

The gumbo contains shellfish and wheat. The fishfry seasoning contains wheat. Both sauces contain egg. Full ingredient lists are on every back panel.

No artificial colors or flavors. The sauces use a standard preservative so they stay shelf stable once opened.

Warm, not hot. It is seasoned the way the restaurant served it, which was meant to please a whole table.

When shipping opens, yes. On dry ice, Monday through Wednesday only, so it never spends a weekend in a truck.

Keep it frozen until you are ready to cook. Once thawed, cook it within two days.

Refrigerate after opening and use within thirty days. Both sauces are 12 fl oz.

The sauce bottles and caps are recyclable. The gumbo carton is recyclable; the inner pouch is not.

A wheelhouse is where you steer the boat and it is also the thing you do best. Both apply.
